Coffee Canto de Quetzal

 

Our Canto de Quetzal coffee comes from the land of Tapachula (between the waters), Chiapas. This is the homeland of the beautiful Quetzal bird, which was believed by the Mayan civilisation to be the incarnation of the god Kukulcán (known by the Aztecs as Quetzalcoatl).  Due to its particular form and outstanding long tail, they referred to it as the Feathered Serpent.

 

We have named this coffee Song of the Quetzal, to reflect the importance of our Mexican heritage and the rarity of the speciality coffee beans grown in this land.

 

Jungle, sea, volcanos, clouds and sun. Such natural conditions in Tapachula are perfect for harvesting coffee of a superior quality. 

 

What makes this coffee special?

 

Canto de Quetzal is pure arabica coffee with a refreshing palate. A distinctive flavour; it has complex, fruity notes, reminiscent of juicy blackcurrants and sweet raisins.

 

How do we achieve this tantalising flavour? In addition to the unique natural ecosystem which supports this coffee, farmers implement a technique known as polycropping. This method is named as such as it involves growing several crops in the same land. In our case, this results in more complex, tastier, coffee.

 

Roasted at the origin, Canto de Quetzal coffee beans are a medium roast. How you prepare your coffee determines the strength; for a stronger brew, use around 15g of ground coffee (per cup) in a french press. 

 

Care & Recommendations

 

Order your coffee as whole beans or ground for espresso (ideal for americano, latte or flat white preparation) or a custom grind for your coffee maker. Where possible, we recommend ordering our coffee as whole beans, as they retain their freshness and peak flavour for longer (up to 6 months is optimum, after this the flavour may start to decline.) Ground coffee starts to lose freshness after around 2 months.
Our packaging is designed to offer exceptional storage for your superior coffee beans. Once opened, we recommend storing your coffee in an airtight, glass container, in a cool, dark place. We don’t recommend refrigerating your coffee.
